This Aussie Farmer Makes JAM To Save His STRAWBERRIES From Waste
Anthony Sarks’ pick-your-own strawberry farm in Blackmans Point is normally bustling with visitors during August and September, which is the peak of strawberry season. However, the regional lockdown has greatly impacted his business. Instead of discarding the strawberries from his unpicked 140,000 plants, he decided to turn them into jam!
Mr. Sarks has teamed up with Eric Robinson who owns The Other Chef, a condiment manufacturer in Port Macquarie, to mass-produce over 25,000 jars of strawberry jam in just 2 weeks. That’s nearly a year’s worth of jam!
Although this has saved his fruit from going to waste, it has unfortunately come at a cost. The Aussie farmer says he’s not only lost income from the lockdown but now has to pay to turn the strawberries into jam.
